When a poblano chili is dried, it is called an ancho chili. This chili actually has two distinct flavours—the outside skin has a sweet, raisin-like taste, and the inner part is hot.

Ancho chilies, along with mulato and pasilla chilies are part of the trinity of chilies used to make mole.
