The lovely orange colour and mellow flavour of this baked chicken comes from achiote, a spice paste made with annatto seeds which is popular in the Yucatán region. Serve the chicken and vegetables inside corn tortillas.

This package includes:

1 x Mexican Oregano 50 grams @MXFlavour 
1 x Achiote Paste 100 grams @MXFlavour
1 x Whole Black Beans 850 grams @MXFlavour
1 x 30 pack White Corn Tortillas (14 cm) @MXFlavour

Pollo Pibil Recipe


  • 1 whole chicken – cut into pieces or at least opened in half
  • 10 cloves of garlic
  • 1 tablespoon of Mexican Oregano @MXFlavour 
  • 10  black pepper corns
  • ¼  bar Achiote Paste @MXFlavour
  • 1 cup white vinegar
  • 1 tablespoon of rock salt
  • 3 cups of thickly sliced vegetables – whatever is in season. (In the video we used 3 potatoes, 3 zucchinis and 4 tomatoes)
  • White Corn Tortillas @MXFlavour


  1. Pre-heat the oven to 180° C
  2. Blend the garlic, oregano, pepper, achiote, vinegar and salt in a blender and then spread it over the chicken pieces
  3. Place the chicken in oven bag and refrigerate for at least 1 hour or overnight for deeper flavour (very important!)
  4. Place the chicken (still inside the oven bag) and bake at 180° C for 1 hour
  5. Remove the chicken from the oven and allow to cool slightly while you place the thickly sliced vegetables in layers into a baking dish.
  6. Place the chicken on top of the layered sliced veggies, skin side up 
  7. Return the chicken to the oven and cook uncovered at 220° for 15 minutes
  8. For an authentic Mexican experience serve the chicken and vegetables with tortillas and whole black beans on the side so that diners can pull the chicken meat from the pieces and place it into tortillas along with the baked vegetables and beans
